Modern Olive Oil Extraction Process

The modern, capital-intensive process for extracting olive oil, as illustrated in the provided diagram, involves several automated stages. The process begins with olives being placed in a storage hopper and moved by a conveyor belt through a washing stage and a leaf removal station. The clean olives are then sent to a crusher to form a paste. This paste is mixed in a machine called a malaxer to encourage oil droplets to coalesce. A decanter centrifuge then separates the mixture into three components: oil, water, and a solid residue called pomace. Finally, the oil may pass through an oil polisher for further purification before being collected as clean oil.
