Heterolactic fermentation
This is a type of fermentation that produces a mixture of lactic acid, acetic acid, ethanol, and CO2 as a result of using the pentose phosphate pathway instead of the EMP pathway of glycolysis. An example includes Leuconostoc mesenteroides which is involved in vegetables like cucumbers, cabbage, pickles and sauerkraut.
