Staphylococcal Food Poisoning: Virulence Factors
Enterotoxin proteins produced by the bacteria are resistant to low pH, allowing them to enter into the stomach and thus cause food intoxication. Enterotoxins can also function as superantigens by activating T cell proliferation and illiciting a strong immune response.
