These are fatty acids with hydrocarbon chains containing at least one double bond due to having  fewer hydrogen atoms. This type of fatty acid has a kink within the carbon skeleton due to the rigid bend from the double bond. Some examples include avacoda, seeds, snuts, oil, and fish.

This type of fatty acid has hydrocarbon chains that contain only single bonds. They tend to have the greatest number of hydrogen atoms possible therefore saturating the hydrogen. They also tend to be very flexible. 
Some examples of saturated fatty acids include butter, cheese, cakes, and fatty meats.
