Unsaturated Fatty Acids

These are fatty acids with hydrocarbon chains containing at least one double bond due to having fewer hydrogen atoms. This type of fatty acid has a kink within the carbon skeleton due to the rigid bend from the double bond. Some examples include avacoda, seeds, snuts, oil, and fish.
